At Cadet, we strive for Community Well Being. One way we do that is by promoting a healthy lifestyle for our employees. On a monthly basis through our Movin’ It and Losin’ It program, we recognize employees who are making progress toward weight loss and physical fitness goals. In addition, our employees receive a cash reimbursement toward healthy living items that they buy such as running shoes, yoga classes and stationary bikes, just to name a few.
Another big part of healthy living is making smart choices about what we put in our bodies at mealtime. We have been very fortunate to meet and get to know local Chef Sunie Mann who runs a catering company called Always Sunie Catering here in Vancouver, WA. At our health fair last month and at our recent all employee celebration, Chef Sunie cooked for us her delicious dishes. She proves that with good ingredients and a little creativity, it is possible to put a healthy spin on some our traditional favorites.
Try this unique recipe from Chef Sunie that you can easily prepare for your family to help create a healthy lifestyle.
Oven Fried Chicken
- 1 cup Crispex cereal
- 1 cup Classic Melba Toast
- 2 tbsp Granulated garlic
- 1 tbsp Cayenne
- 1/4 cup Brown sugar
- Dash Kosher salt
- Dash Black Pepper
- 1 tbsp of sesame oil
Combine all ingredients in a food processor and blend.
Put blended mixture into a rectangular baking dish or medium size mixing bowl.
Wash and dry 4-5 boneless, skinless chicken breasts
In large mixing bowl, Mix 1 cup light Mayonnaise with 1/4 cup Dijon mustard and 1/4 Cup Honey
Add chicken breasts and coat with honey Dijon mixture
Roll coated chicken in the dry Crispex Mix
Place on a rack on a tinfoil lined cookie sheet and bake at 400 for about 40 minutes.
